Study on the quality of Sandesh collected from Kolkata and its suburbs

Abstract: The quality of sandesh collected from Kolkata and its suburbs is being studied. The microbiological load of sandesh is estimated through Standard Plate Count, Coliform Count, Proteolytic count, Yeast and mould Count, Thermophilic Count, Staphylococcal Count and Spore former Count. There is variation in counts obtained within the findings of researchers. It is due to uneven quality of sandesh sold in the market which is prepared through improper handling of milk, non-standard method of manufacture and improper storage.
