Abstract: Samples of Khoa from Nagpur city were examined during the course of investigation. In all 75 samples were collected from four different regions viz., east, west, north and south region of Nagpur city and another sample of khoa prepared in processing unit of Animal Husbandry and Dairy Science. 15 samples from each group were analyzed during three fortnights. Sensory scores of colour and appearance were found to be 6.93 (T1, East), 7.92 (T2, West), 6.90 (T3, North) 6.72 (T4, South) and 8.16 (T5, Laboratory sample), body and texture found to be 6.81 (T1, East), 8.09 (T2, West), 6.82 (T3, North), 6.66 (T4, South) and 8.55 (T5, Laboratory sample), flavour score found to be 6.81 (T1, East), 8.04 (T2, West), 7.09 (T3, North), 6.73 (T4, South) and 8.58 (T5, Laboratory sample) and scores overall acceptability were found to be 6.59 (T1, East), 7.92 (T2, West, 6.99 (T3, North), 6.26 (T4, South) and 8.57 (T5, Laboratory sample) in east, west, north and south region and laboratory sample, respectively. The sensory profile of Khoa produced (T5) in laboratory prepared sample of Nagpur city was better and scored highest (8.57) sensory score. It was inferred that, sensory quality of laboratory prepared khoa was good than north, west, south and east region Khoa which were fair in quality.
The sale price of Khoa in Nagpur city from laboratory prepared khoa was found to be Rs.640 kg-1 which was highest amongst all regions while, the lowest cost of khoa was found in south regions i.e. Rs. 400 kg-1. The cost of Khoa obtained from east and north region was found to be Rs. 480 kg-1. The difference in sale price kg-1of Khoa sold in Nagpur city might be due to the quality parameters.
